Tzatziki Sauce (for Souvlaki)
Sauces
1 tablespoon lemon juice
1 small garlic glove, minced to paste
¾ cup plain Greek yogurt
½ cucumber, peeled, halved lengthwise, seeded, and diced fine (1/2 cup)
3 tablespoons minced fresh mint
1 tablespoon minced fresh parsley
⅜ teaspoon salt
Whisk lemon juice and garlic together in small bowl. Let stand for 10 minutes. Stir in yogurt, cucumber, mint, parsley, and salt. Cover and set aside.
