Summer Vegetable Couscous

  • 1 zucchini, grated

  • ¼ cup diced white onion

  • 1½ cups fresh (cooked) or frozen corn

  • ¾ cup couscous

  • 1 cup chicken stock

  • ½ teaspoon salt

  • ¼ teaspoon pepper

  • 1½ tablespoons olive oil

Serves 6
Saute onion and zucchini in olive oil over medium-low heat until soft. Meanwhile, prepare couscous according to package without salt and oil, substituting stock for water. When onion mixture is soft, add corn, salt and pepper. Cook until corn is heated through. Combine with couscous.
