Pumpkin Muffins

Breads
  • 3⅓ cups flour

  • 2 teaspoons baking soda

  • 3 cups sugar

  • 1½ teaspoons salt

  • 1 teaspoon cinnamon

  • 1 teaspoon nutmeg

  • ¼ teaspoon ground ginger

  • 1 cup oil

  • 4 eggs

  • ⅔ cup water

  • 2 cups pumpkin

Preheat oven to 350°F degrees.
Prepare muffin tins by greasing with vegetable oil or butter and lightly sprinkling with flour. Shake out excess.
Mix together dry ingredients, then add oil, eggs, water and pumpkin. Fill muffin tins three-quarters full and bake for 20 - 30 minutes or until toothpick inserted in center comes out clean.
Frost with cream cheese frosting.
