Honey Ginger Syrup

250 g fresh ginger, washed and cut into 1/2-inch chunks
1 cup boiling water
250 g honey
Put the ginger in a blender and add the boiling water and honey. Blend thoroughly, and then strain through a fine-mesh sieve.
Syrup won't be perfectly clear. Store in the refrigerator for up to 1 week.
