Hearty Chocolate Chip Oatmeal Cookies

1 cup butter
1 cup brown sugar
1 cup white sugar
2 eggs
1 teaspoon vanilla
2½ cups oatmeal
2 cups flour
½ teaspoon salt
1 teaspoon baking soda
1 teaspoon powder
12 oz. chocolate chips
1½ cups nuts (optional)
Preheat oven to 375°
Cream butter, sugar and brown sugar. Add eggs, one at a time, and vanilla. In a separate bowl, mix oatmeal, flour, salt, baking soda and baking powder. Add flour mixture to butter/sugar mixture until combined. Add chocolate chips (and nuts, if desired.) Using small ice cream scoop, form dough into balls and place on cookie sheet. [Dough can be scooped into balls and frozen for later use.] Bake for 12 minutes.
