Baked Beans

¼ pound bacon, diced
1½ cups chopped onions
2 teaspoons minced garlic
½ cup ketchup
½ cup unsulfured molasses
½ cup water
¼ cup firmly packed brown sugar
¼ cup cider vinegar
2 teaspoons dry mustard
½ teaspoon freshly ground black pepper
½ teaspoon red pepper sauce
2 cans (15 oz) black beans, drained & rinsed
2 cans (15 oz) white beans
Makes 6 cups.
Preheat oven to 325°. Cook bacon (or salt pork) in skillet over medium heat until golden, about 5 minutes. Add onions and garlic; cook until softened, about 3 minutes. Transfer to 2 1/2-quart casserole; stir in remaining ingredients. Cover and bake 1 hour. Stir then bake uncovered 30 minutes more. (Can be made ahead. Cool to room temperature. Cover and refrigerate up to 2 days. Microwave on high 10 minutes, stirring every 3 minutes. )
Easily doubles. Can substitute beans: 2 cans white (navy) beans, 2 cans random (butter, pinto, black, kidney) for shape and color.
