Ambrosia Salad a la Michelle's Mom
Soups and Salads
1 pound orzo pasta (cooked, drained & cooled)
2 lg cans crushed pineapple
2 lg cans (15 oz) mandarin oranges
1 lg jar dessert cherries, halved
¾ cup sugar
½ teaspoon salt
1 lemon
2 tablespoons cornstarch
2 eggs
8 oz container Cook Whip
Drain all the juice from all fruits into a saute pan. Add ¾ cup sugar, ½ teaspoon salt, juice of one lemon, and 2 tablespoons cornstarch. Bring to almost a boil. Whisk. Slightly beat eggs. Take part of juice, mix with eggs, then return to pan. Keep whisking until sauce thickens (like cream soup.)
Pour over orzo and mix. Cover and refrigerate overnight.
Before serving, add fruit and Cool Whip.
