  • 1 banana per cup of sugar

  • 2:1 sugar to water

Heat water to boiling, take it off the hear, put cut up banana flesh and whole peel into the water.
Add half the amount of sugar, give it a stir to cover, and let steep for 30 minutes.
Strain, and add remaining sugar.
Whisk to combine until everything is dissolved.
