Roasted Broccoli with Bacon

  • 2 bunches broccoli

  • 5 peeled cloves of garlic

  • 4 slices bacon, cut into bite-sized pieces

  • olive oil or melted ghee

  • Salt and pepper

Cut broccoli into florets, trimming rough skins from stems. Toss broccoli, bacon, garlic cloves in a gallon-sized Ziploc bag to store in fridge until ready to roast.
Preheat oven to 400°. Add oil/ghee to Ziplock bag, with generous amount of salt and freshly-ground pepper. Seal bag and shake vigorously, then dump contents onto foil-lined baking tray. Distribute to make one even layer.
Oven-roast for 30-35 minutes, rotating tray and flipping contents every 10 minutes or so.
Optional: Add squeeze of lemon or favorite vinegar and/or shower of grated parmesan cheese.
