Kalua Pig (Slow Cooker)

  • 5 pound Boston butt pork roast

  • 3 slices of bacon

  • 1½ tablespoons Alaea Red Hawaiian Coarse Sea Salt (or 1 Tbst fine)

  • 5 peeled garlic cloves

Line the slow cooker with 3 slices of bacon. Tuck garlic cloves into roast. Salt the pork all over (use¾ teaspoon of medium-coarse salt for every 1 pound of meat.) Place the roast on top of the bacon, fat (skin) side up. Cook roast on low for about 16 hours. Don't add any liquid. Remove the meat and shred with two forks. Check for seasoning and adjust with the cooking liquid that remains at the bottom of the pot.
