Grilled Artichokes

  • ½ cup olive oil

  • 2 - 3 garlic cloves, chopped

  • 1 lemon, juiced

  • 1 - 2 tablespoons soy sauce

  • Salt and pepper

Steam artichokes 45 minutes, until tender. Let cool. Halve and remove choke and core.
Combine ingredients to make marinade. Baste artichokes outside and inside, season with salt and pepper, then chill in refrigerator.
Grill, covered, on hot grill for 3 or 4 minutes per side. Baste and reseason with salt and pepper after turning.
Add remaining marinade to mayonnaise to make a dipping sauce -- salt and pepper to taste.
