Butter Lettuce Salad with Blue Cheese Vinegarette

  • 8 slices bacon

  • 3 tablespoons mayonnaise

  • 2 tablespoons white wine vinegar

  • ½ cup vegetable oil

  • 1 cup blue cheese (Roquefort)

  • 2 heads butter lettuce

  • ½ cup dried cherries or cranberries

Cook bacon -- crumble. Whisk mayonnaise and vinegar. Gradually whisk in oil, then cheese. Season with salt and pepper.
Toss lettuce, ½ the dried fruit and ½ the bacon with enough dressing to coat. Divide salad to plates and top with remaining dried fruit and bacon.
