Cheesy Potatoes

  • 6 potatoes, medium-sized

  • 2 cups shredded sharp cheddar

  • ⅓ cup green onions, chopped

  • ¼ cup butter, melted

  • 1 pt. sour cream

Preheat oven to 350°.
Boil potatoes with skins until cooked but firm. Refrigerate until cold. Grate on large side of box grater. Season with salt and pepper. Mix in cheese, onions and sour cream. Drizzle butter on top and toss thoroughly to mix. Bake at 350° for approximately 40 minutes.
