Sand Dabs

Fish
  • frozen sand dabs

  • ¾ cup milk

  • ¾ cup heavy cream

  • 2 tablespoons flour

  • salt

  • fish seasoning (Paul Proudhomme or Emeril's)

Thaw sand dabs under cold water, then soak in mixture of milk and heavy cream. Set up some flour with salt and fish seasoning. After fish has soaked for 5 - 15 minutes, dredge the fish in hte flour and set out on a pan. Once you have a decent amount of fish coated, saute in a preheated skillet. Each side of the fish should cook for no more than 2 minutes, unless you like them crispy. Remove from pan and serve immediately. Serve with tartar sauce or a lemon butter sauce.
