Chicken Parmesan a la Michele

  • 4 chicken breasts

  • 1 cup flour

  • 2 - 3 eggs

  • 1 cup Italian bread crumbs

  • 15 - 20 Ritz crackers

  • 1 log Buffalo mozzerella

  • 1 stick unsalted butter

  • pasta

  • pasta sauce (Newman's Sockerooni)

  • parmesan cheese

Serves 4
Preheat oven to 375°. Dredge chicken breasts in flour, then eggs, then combination of bread crumbs, crackers, and parmesan cheese.
Place breaded breasts in pan sprayed lightly with Pam. Place small pats of butter on chicken and around pan.
Bake at 375° for approx 35 - 40 minutes, or until internal temperature reaches above 140°.
Take pan out of oven and top each breast with some pasta sauce and slices of mozzerella. Place chicken back in oven, reduce temp to 350° and bake 10 - 15 minutes longer until cheese is somewhat melted. Serve with pasta and additional sauce.
